Pizza with Mole

Yield: 3 Servings

Preparation Time: 30 Minutes

Difficulty: Low

Ingredients:

        1 cup of mole prepared as indicated on the label.

        250 gr of pizza dough.

        250 gr of chicken roasted in cubes.

        1 Cup of striped mozzarella cheese.

        5 Sprigs of fresh rosemary.

Preparation:

1.- Dilute the mole in chicken broth according to the instructions on the label to achieve 1 cup. Let it boil until it becomes dense.

2.-Spread the dough in a pan to bake and apply a uniform and medium layer of mole.

3.-Put the cheese evenly.

4.-Add the chicken.

5.-Add the sprigs of rosemary.

6.-With the oven to 180 C bake for 30 minutes.

Hamburger with Mole

Yield: 4 servings

Preparation Time: 40 Minutes

Difficulty: Low

Ingredients:

        2 cups of mole already prepared according to the label.

        ½ kg of ground beef, pork, veal, turkey or chicken.

        1 medium onion.

        4 cloves garlic peeled.

        3 tablespoons bread crumbs.

        1 egg

        1 tablespoon of dried parsley.

        1 tablespoon ground pepper

      Preparation:

1.-Dilute the mole in chicken broth according to the instructions on the label to achieve 2 cups.

2.-Grind in the blender the whole vegetable, add the pepper and in a medium bowl mix with the ground meat in a homogeneous way.

3.-Add the breadcrumbs, the egg and the amount of mole to give a solid and handy consistency. Add salt to taste. Make sure the mixture is homogeneous.

4.-Make the hamburger with this mixture of the desired size and thickness, fry in olive oil.

5.-Serve in hamburger bread, bathe the hamburger with mole and add lettuce, tomato, and onion. Cheese optional.

Chilaquiles with Mole

Yield: 4 servings

Preparation time: 3 minutes.

Difficulty: Low

Ingredients:

        8 tortillas cutted in triangles from the previous day.

        1/3 cup of cream.

        2 cups of prepared mole.

        ¾ cup of fresh cheese.

        2/3 cup chopped coriander.

        ¼ of chopped onion

Preparation:

1.- Dilute the mole in chicken broth according to the instructions on the label to achieve 4 cups. Keep it on low heat.

2.-Cold half tortillas triangles in a frying pan with a little oil until slightly browned.

3.-Let them drain the one plate with a paper towel for one minute.

4.-Put them on the plate bathe them with mole and decorate them by spreading the cream, the coriander, onion, and the fresh cheese.

5. Repeat the procedure with the other half of the tortilla triangles.

Mexican Lasagna

Yield: 10 Servings

Preparation time: 40 Min

Difficulty: Low

Ingredients:

        2 cups mole already prepared according to the label.

        ½ Baked and shredded chicken breast.

        12 fried tortillas

        ½ cup of striped mozzarella cheese.

 

Preparation:

1.- Dilute the mole in chicken broth according to the instructions on the label to achieve 2 cups. Let it boil until it becomes dense.

2. In a large refractory, apply a thin layer of mole.

3.-Put a layer of 6 tortillas.

4.-Apply another thin layer of mole.

5.-Put a layer of chicken stripped.

6.-Put another layer of 6 tortillas.

7.-Apply another layer of thin mole.

8. Spread the cheese as a final coat.

9.-Bake at 180 C for 20 minutes.

Mole Pancake

Yield: 12 Servings

Preparation time: 1 Hr.

Difficulty: Low

Ingredients:

        300 gr of bitter chocolate.

        300 gr of butter.

        270 gr of sugar.

        150 gr of flour

        150 gr of almond powder.

        150 g of mole.

        5 eggs.

Preparation:

1.-In a pot melt the chocolate and add the mole and flour.

2.- In a bowl, mix the butter, sugar and add the eggs one by one without stirring and then add the almond powder.

3.-Grease a refractory and put some flour and pour the mixture.

3.-Heat the oven to 180 C and bake for 30 minutes, you can insert a toothpick when it comes out dry the dish is at its point.

Note: Serve with the snow of your choice, the vanilla is perfect.

Chicken Enchiladas with Mole

 

Yield: 4 Persons.

Preparation time: 35 minutes.

Difficulty: Low.

Ingredients:

        8 tortillas.

        2 chicken breasts cooked and shredded.

        2 cups of mole.

        ¼ cup finely chopped fresh coriander

        ½ onion sliced.

        1 cup finely-cut manchego cheese.

 

Preparation:

1.- Dilute the mole in chicken broth according to the instructions on the label to achieve 2 cups. Keep it on low heat.

2.-Heat the oven to 250 degrees.

3.-In a refractory rose with vegetable spray put the rolled tortillas filled with chicken after heating them in a frying pan with half a spoonful of oil.

4. Wash the tortillas with the diluted mole and sprinkle the cheese and coriander.

5.-Bake enough for the cheese to melt, about 15 minutes.

6.- Cut each serving into the dish and add cream and onion to taste.

Banana Enchiladas

Yield: 4 servings.

Ingredients:

         8 tortillas.

         2 ripe plantains.

         1 cup of cream cheese.

         Pepper to taste and a pinch of salt.

         2 cups of mole.

         1/2 cup of yellow cheese.

Preparation:

1.- Dilute the mole in chicken broth according to the instructions on the label to achieve 2 cups. Keep it on low heat.

2. Cover the bananas with aluminum foil and bake them at 200 degrees for 30 minutes.

3.- Macerate the bananas with a fork and mix it evenly with the cream cheese and add pepper to the taste and a pinch of salt.

4.- In a refractory rose with vegetable spray put the rolled tortillas filled with the mixture after heating them in a frying pan with half a spoonful of oil.

5.- Bathe the tortillas with the diluted mole and sprinkle the yellow cheese.

6.- Bake enough for the cheese to melt, about 15 minutes.

Over Easy Eggs with Mole

Yield: 4 people

Preparation time: 20 min.

Difficulty: Low

Ingredients:

         8 eggs

         4 tortillas.

         1 male plantain.

         ½ cup ground refried beans

         2 cups of prepared mole.

         2 tablespoons of sesame seeds.

         Olive oil.

         Chicken soup.

      Preparation:

1.- Dilute the mole in chicken broth according to the instructions on the label to achieve 4 cups. Keep it on low heat.

2. Heat 4 tablespoons vegetable oil in a frying pan, cut the banana into thin slices and fry on both sides until lightly browned, remove and dry with paper towels.

3.-In another frying pan the eggs of two in two to the degree of its predilection.

4.-In a pan fry the refried beans and in another with half a tablespoon of oil the tortillas.

5.-Set up each dish by putting a tortilla and sprinkle a thin layer of beans, add two eggs to and bathe with half a cup of diluted mole, decorate with the banana slices and sprinkle half a tablespoon of sesame in each dish.

Tamales with Mole

Yield: 40 tamales.

Preparation time: 2 Hrs.

Difficulty: Medium.

Ingredients:

         1 Lt. of prepared Mole.

         2 kg of flour.

         ¾ kg of butter.

         1 onion.

         2 tablespoons baking powder.

         1 sprig of coriander.

         30 transparent peels of green tomato.

         40 banana leaves.

         1.5 Kg of cooked chicken.

         1 Lt of chicken broth (where the chicken was cooked.)

Preparation:

1.-After washing the transparent green tomato peels are sewed in enough water together with the baking powder, let cool.

2.-Thicken the chicken along with the split onion and the coriander. Remove the chicken, let cool and crumble, do not throw the broth.

3.- Dilute the mole in chicken broth according to the instructions on the label to achieve 1 Lt. Let it boil until dense consistency, add the shredded chicken and add salt to taste.

4.-In a large plastic container shake the butter with the blender until it is a sponge and begin to add the flour gradually and 1 Lt. of chicken broth, never stop shaking is very important, shake it for 20 minutes until the proper texture.

5. Cut the banana leaves to the desired size, flush with water and cook until softened.

6. Put the banana leaf on a table or a chopping board, add in the center a tablespoon of dough, spread it and put a small amount of chicken in the center. Fold the sheet so that the dough does not come out, repeat the procedure until the dough or chicken is finished.

Romeritos with Mole

Yield: 4 servings

Preparation time:

Difficulty: Medium

Ingredients:

         1 kg of Romeritos.

         2 cups of diluted ole.

         1 cooked and shredded chicken breast

         200 gr. Of Cotija cheese.

         4 large cooked potatoes.

         ½ cup cooked and chopped nopal.

         1 Lt chicken broth (can be used where the breast was cooked)

         200 gr. Dry shrimp, head and tail

Preparation:

1.-Clean the romeritos and remove the dry leaves.

2.- Cook them in water with a little salt, remove them and drain them.

3.-Dilute the mole in chicken broth according to the instructions on the label to achieve 2 cups. Let it boil until it becomes dense.

4.-Add the shrimp and nopal and let cook for 5 minutes over low heat.

5.-Add the potatoes, the cheese, and the romeritos let simmer for 2 minutes.

6.-Season with salt and pepper to taste.
